Cinnamon rolls from Zurich

Overnight. By hand.
No two alike.

Slow-proved dough, every roll shaped by hand, baked fresh every morning.

from 19 November at the Dörfli — soon also at Reif Metzgerei

Our story

A cinnamon roll I never forgot.

Laughing in the production kitchen, a fresh cinnamon roll in hand

eight years in the making

Eight years ago, on a trip up north. No marketing, no frills, just an honest product — a cinnamon roll. Nowhere else made it quite the way they did there. The question stayed with us: why not here in Zurich?

A dough of many thin layers, quality ingredients, more craft than recipe.

For eight years the idea kept rising. There was a job — but then things changed, and we said to ourselves: “If not now, when?”

The name “Olaf’s Bakery” points to where it all comes from. Everything else is our own handwriting.

Now we bake. The dough proves overnight, and every roll is shaped by hand — which is why no two look alike.

the rest is our own handwriting

The secret is no secret

Real craft.

The dough proves overnight — it rests, is worked and rolled by hand. That time can’t be rushed, and you can taste it in every layer. Details in the process, how the filling is used and the order of the steps decide the result, not just the recipe. Each roll is baked individually (not as a tray bake), fresh where it is sold. All production takes place in Zurich.

Fair warning

That’s why no two look alike.

It isn’t a flaw. Same dough, same kitchen, same hand.
